- 4 slices thick-cut bacon
- 1 cup yellow onion, finely chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 to 4 cups water, to your desired consistency
- 1 bay leaf
- ½ tsp Italian seasoning
- 1 pound (16 oz) split peas, rinsed
- 1 large carrot, chopped
- Sea salt and black pepper to taste
Instructions
- Heat a large pot over medium-high heat and add the bacon in a single layer. Cook until crispy, flipping occasionally, then remove and chop into pieces.
- In the same pot with the bacon grease, sauté the chopped onion for about 5 minutes until softened. Add the minced garlic and sauté for an additional 2-3 minutes.
- Pour in chicken broth, water, bay leaf, Italian seasoning, and split peas. Stir well, cover, and bring it to a boil. Reduce heat and simmer for 1 hour, checking consistency.
- After an hour, add the chopped carrots. Cover and cook for another 30 minutes until both carrots and peas are soft. For a thicker soup, leave the lid off during the last time.
- Stir in the chopped bacon, season with salt and pepper, and serve with optional olive oil, lemon juice, or freshly grated parmesan on top.
Notes
Bacon can be cooked in advance for quicker prep.
Adjust the amount of water for your preferred soup consistency.
