Description

Treat yourself to Strawberry Cheesecake Overnight Oats, a perfect blend of flavors and textures. This easy recipe combines cream cheese, strawberries, and oatmeal for a delightful meal that’s great for breakfast or a snack.


Ingredients

  • 4 oz cream cheese, softened
  • 1 tbsp lemon juice
  • 1/4 tsp vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup strawberries, diced
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 cup vanilla yogurt
  • 1 cup old fashioned rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract


Instructions

  • In a bowl, mix the diced strawberries, almond milk, and yogurt.
  • Add the rolled oats, chia seeds, maple syrup, and vanilla to the bowl and stir until well combined.
  • Divide the mixture evenly between two containers.
  • In another bowl, prepare the cheesecake filling by blending the softened cream cheese, lemon juice, vanilla, and powdered sugar until smooth.
  • Add a dollop of the cheesecake filling to each container of oat mixture.
  • Stir gently to combine the cheesecake filling with the oats.
  • Sprinkle with graham cracker crumbs just before serving.

Notes

For a creamier texture, let the overnight oats sit in the fridge for at least 4 hours before eating.
You can substitute the strawberries with other berries if desired.
