Description

These Stuffed Baked Potatoes bring a delightful mix of flavors with smoked pulled pork, colby jack cheese, and zesty barbecue sauce, making them a perfect comfort food or quick dinner option.


Ingredients

  • 2 large baking potatoes scrubbed and cleaned
  • 1 cup smoked pulled pork use more or less to your taste
  • 2/3 cup shredded colby jack cheese
  • 4 tbsp unsalted butter plus additional as needed
  • 1/3 cups barbecue sauce use your favorite
  • 1/2 tsp salted adjust to taste
  • 1/2 tsp black pepper adjust to taste
  • 4 tbsp sour cream
  • pickled jalapenos, chopped fresh chives or green onions for serving


Instructions

  • Preheat the oven to 450°F.
  • Wash and dry the potatoes and poke holes on the top of the potatoes with a fork.
  • Place the potatoes on a rack over a baking sheet, baste them with melted butter, and sprinkle with salt and black pepper.
  • Bake for about 30 minutes, then baste the potatoes with more melted butter and bake for another 25 minutes or until fork tender.
  • Split the potatoes and fluff the flesh inside with a fork.
  • Place thin pats of butter inside the potatoes, followed by a sprinkle of salt and pepper.
  • Sprinkle half the shredded cheese in each potato, spoon half the pulled pork on top, and drizzle with barbecue sauce.
  • Add jalapenos on top, drizzle with sour cream, and garnish with chopped chives before serving.

Notes

Feel free to adjust the quantity of pulled pork to suit your taste.
For a spicy kick, add extra jalapenos or your favorite hot sauce.
These stuffed potatoes are perfect for meal prep and can be made ahead of time.
