Description

  • 1 9-inch homemade unbaked pie crust
  • pounds (680g) sweet potatoes
  • 4 ounces (113g) butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) brown sugar
  • ½ cup (120ml) evaporated milk
  • 2 large eggs + 1 egg yolk
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 1½ teaspoons vanilla extract


Instructions

  • Preheat oven to 350°F (180°C). Prepare the pie crust by rolling it out and placing it in a pie plate.
  • Rinse, peel, and chop sweet potatoes, then boil until tender, about 12 minutes. Drain and let sit.
  • Mash sweet potatoes until smooth, then mix in butter, sugars, evaporated milk, eggs, spices, salt, and vanilla until creamy.
  • Pour the filling into the prepared pie crust and bake for 40 minutes until golden brown and toothpick inserted comes out clean.
  • Cool the pie at room temperature before serving, optionally topping with whipped cream or caramel.
