- 1½ pounds (680g) sweet potatoes
- 4 ounces (113g) butter, softened
- ½ cup (100g) granulated sugar
- ½ cup (110g) brown sugar
- ½ cup (120ml) evaporated milk
- 2 large eggs + 1 egg yolk
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 1½ teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (180°C). Prepare the pie crust by rolling it out and placing it in a pie plate.
- Rinse, peel, and chop sweet potatoes, then boil until tender, about 12 minutes. Drain and let sit.
- Mash sweet potatoes until smooth, then mix in butter, sugars, evaporated milk, eggs, spices, salt, and vanilla until creamy.
- Pour the filling into the prepared pie crust and bake for 40 minutes until golden brown and toothpick inserted comes out clean.
- Cool the pie at room temperature before serving, optionally topping with whipped cream or caramel.
