- 1 pound lean ground beef
- 2 teaspoons minced garlic
- 3 tablespoons taco seasoning
- 3 tablespoons all-purpose flour
- 2 ½ cups low-sodium beef broth
- ½ cup salsa
- 3 cups crushed tortilla chips
- 2 cups shredded cheese
- 1 (15-ounce) can of black beans
- 1 ½ cups frozen corn
- 1 (10-ounce) can diced tomatoes & green chiles
- 1 (4-ounce) can diced green chiles
- 1 (2.25-ounce) can sliced black olives
- Toppings: Diced onion, diced tomatoes, pico de gallo, sliced avocado, sour cream, salsa, pickled jalapeños, fresh cilantro
Instructions
- Brown the ground beef in a skillet over medium heat and add minced garlic.
- Add taco seasoning and flour, mixing to coat the beef.
- Pour in beef broth and salsa, bringing to a simmer.
- Layer crushed tortilla chips in a greased baking dish and top with beef mixture and cheese.
- Add black beans, corn, diced tomatoes & green chiles, and top with more tortilla chips.
- Bake at 350°F (175°C) for 20 minutes or until cheese is bubbly.
Notes
For a vegetarian option, use beans or lentils instead of beef.
You can make the casserole ahead of time and refrigerate before baking.
Experiment with toppings like lime juice or jalapeños for extra flavor.
