This tater tot breakfast casserole combines crispy bacon, fluffy eggs, and colorful veggies, creating a delicious and hearty dish perfect for any meal.

- 1 pound bacon, chopped
- 2 tablespoons bacon grease or olive oil
- 1 medium red pepper, chopped
- 1 medium white onion, chopped
- 4 cloves garlic, chopped
- 6 large eggs
- ½ cup milk
- 28 oz. frozen tater tots
- 8 oz. cheddar cheese, grated
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Green onions, for garnish
Instructions
- Preheat oven to 350°F. Cook chopped bacon in a skillet over medium-low heat until crispy. Set aside.
- Sauté onions, red pepper, and garlic in bacon grease for 4-5 minutes until soft.
- In a bowl, combine tater tots, sautéed veggies, bacon, half the cheese, salt, and pepper. Mix eggs and milk, pour over and combine.
- Transfer to a greased 9×13 baking dish, bake for 60-75 minutes, adding remaining cheese halfway through until golden.
- Let casserole rest before slicing. Serve warm with green onions and hot sauce.
Notes
Casserole can be prepared a day ahead and baked fresh in the morning.
For a vegetarian version, omit bacon and add more vegetables.
Store leftovers for up to 3 days in the refrigerator or freeze for 3 months.
