Description

This tater tot breakfast casserole combines crispy bacon, fluffy eggs, and colorful veggies, creating a delicious and hearty dish perfect for any meal.


Ingredients

  • 1 pound bacon, chopped
  • 2 tablespoons bacon grease or olive oil
  • 1 medium red pepper, chopped
  • 1 medium white onion, chopped
  • 4 cloves garlic, chopped
  • 6 large eggs
  • ½ cup milk
  • 28 oz. frozen tater tots
  • 8 oz. cheddar cheese, grated
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Green onions, for garnish


Instructions

  • Preheat oven to 350°F. Cook chopped bacon in a skillet over medium-low heat until crispy. Set aside.
  • Sauté onions, red pepper, and garlic in bacon grease for 4-5 minutes until soft.
  • In a bowl, combine tater tots, sautéed veggies, bacon, half the cheese, salt, and pepper. Mix eggs and milk, pour over and combine.
  • Transfer to a greased 9×13 baking dish, bake for 60-75 minutes, adding remaining cheese halfway through until golden.
  • Let casserole rest before slicing. Serve warm with green onions and hot sauce.

Notes

Casserole can be prepared a day ahead and baked fresh in the morning.
For a vegetarian version, omit bacon and add more vegetables.
Store leftovers for up to 3 days in the refrigerator or freeze for 3 months.
