These Teriyaki Noodles are a delightful dish, blending whole grain spaghetti with vibrant vegetables and a rich teriyaki sauce for a quick, healthy dinner that’s sure to please.

- 16 oz. thin spaghetti noodles (i used whole grain noodles)
- 1 cup teriyaki sauce use homemade sauce or store-bought
- 1 cup snow peas tips removed, sliced on the diagonal
- 1 bunch green onions sliced on the diagonal
- 2 carrots shredded
- 1 tablespoon sesame seeds
- ½ cup cilantro loosely chopped
Instructions
- Put a large pot of water on to boil. Cook the thin spaghetti according to package instructions until al dente.
- While the water heats and noodles cook, prepare the vegetables.
- Slice the snow peas and green onions on the diagonal.
- Shred the carrots and chop the cilantro loosely.
- Mix the teriyaki sauce, reserving one cup for later use.
- Drain the noodles and rinse them under cold water.
- In a mixing bowl, combine the cooked noodles with the prepared vegetables, saving a little of the green onion and cilantro for garnish.
- Toss everything together with the reserved teriyaki sauce and garnish with the remaining vegetables.
Notes
Feel free to add more vegetables to enhance the dish.
For added protein, consider including cooked chicken or tofu.
Adjust the amount of teriyaki sauce based on your taste preference.
