- 1 shallot (thinly sliced)

- 1 tbsp fish sauce
- 1 tbsp lime juice
- ½ tsp chili flakes
- ½ tsp sugar
- ⅓ cup grated carrot
- 1 handful of green onions (finely chopped)
- 1 handful of coriander (finely chopped)
- Lettuce (as needed to make your wraps)
Instructions
- Cook the chicken by breaking it apart in a pot with water until no longer pink (5-7 minutes).
- Add minced ginger, garlic, and sliced shallots to the cooked chicken; mix well.
- Pour in fish sauce, lime juice, chili flakes, and sugar; toss together until coated.
- Fold in grated carrots, chopped green onions, and coriander gently.
- Assemble wraps by scooping chicken mixture into lettuce leaves.
Notes
Store leftovers in the fridge for up to 3 days in an airtight container, keeping chicken and lettuce separate.
You can prepare the filling a day in advance for quick assembly on serving day.
