Description

This Three Bean Salad is a delightful blend of chickpeas, kidney beans, and green beans, creating an irresistible flavor. Its simple prep makes it a perfect healthy meal for quick dinners or gatherings.


Ingredients

  • 15 oz chickpeas (can) drained and rinsed
  • 15 oz kidney beans (can) drained and rinsed
  • 10 oz frozen cut green beans steamed and cooled
  • ½ cup red onion sliced and quartered
  • ½ cup celery finely diced
  • ¼ cup apple cider vinegar
  • 3 tbsp maple syrup
  • 1 clove garlic minced
  • 2 tbsp freshly chopped parsley
  • 1 tsp dijon mustard
  • ½ tsp salt optional
  • pinch black pepper


Instructions

  1. Mix together the chickpeas, kidney beans, green beans, red onion, and celery in a large bowl.
  2. In a separate small bowl, whisk together the apple cider vinegar, maple syrup, minced garlic, chopped parsley, dijon mustard, salt, and black pepper for the dressing.
  3. Pour the dressing over the salad mixture and stir well to combine.
  4. Cover the salad and chill in the fridge for at least 1 hour before serving.

Notes

For added flavor, let the salad sit overnight in the fridge before serving.
