Description

Ingredients

  • 1 cup fresh or panko breadcrumbs
  • 8 tbsp milk
  • 2 tbsp olive oil
  • 2 cup minced onion (about ¼ of a large yellow onion)
  • 2 ½ tsp kosher salt (divided)
  • 3 tsp minced garlic
  • 6 tbsp mayo
  • 2 tbsp minced fresh parsley or 1 tsp dried
  • ½ tsp cayenne pepper
  • ½ tsp ground black pepper
  • 2 large eggs
  • 2 lb ground turkey


Instructions

  1. Preheat your oven to 350ºF.
  2. In a large bowl, combine breadcrumbs and milk. Set aside to allow it to soak while you prepare the other ingredients.
  3. In a saucepan, heat the olive oil over medium heat. Add the minced onion and ¼ tsp salt, cooking until soft, which should take about 7 minutes.
  4. Stir in the minced garlic and cook for about a minute until fragrant. Remove from heat and allow to cool slightly before mixing into the breadcrumb mixture.
  5. Add the mayonnaise, parsley, remaining salt, cayenne, and black pepper to the breadcrumb mixture. Stir until well combined.
  6. Once the mixture has cooled, blend in the eggs followed by the ground turkey. Mix gently but thoroughly.
  7. Shape this mixture into a loaf on a baking sheet lined with parchment paper.
  8. Bake for approximately 1 hour or until the internal temperature reaches 165ºF. Allow it to rest before slicing.

Notes

Make sure not to over mix when adding the turkey to keep the meatloaf tender.
You can substitute the parsley with other herbs like thyme or basil for different flavor profiles.
Letting the meatloaf rest helps to retain its juices for a moist bite.
