- ⅔ cup chicken stock
- 1 tablespoon extra-virgin olive oil

- 1 medium carrot, grated
- 1 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 pounds ground turkey
- 2 tablespoons tomato paste
- ¼ teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 large eggs, beaten
- 2 teaspoons kosher salt
- 1 teaspoon freshly cracked black pepper
- 3 tablespoons Worcestershire sauce
- 2 tablespoons brown sugar
Instructions
- Cook quinoa in chicken stock until tender and set aside.
- Preheat oven to 350°F and sauté onion, carrot, and bell pepper in olive oil until soft.
- In a bowl, combine ground turkey, cooled quinoa, sautéed veggies, and other ingredients; mix well.
- Shape into a loaf on a lined baking sheet and prepare the glaze with brown sugar and Worcestershire sauce.
- Spread the glaze over the meatloaf and bake for 50 minutes or until cooked through.
- Let it rest before slicing and serving.
