  • 4 tablespoons (56g) unsalted butter
  • 2 cups (240g) all-purpose flour
  • ¼ cup (32g) cornstarch
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ½ cups (360ml) buttermilk
  • ¾ cup (180ml) milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the waffle maker.
  2. Melt the butter and allow it to cool slightly.
  3. In a large bowl, mix the flour, cornstarch, sugar, baking powder, baking soda, and salt together.
  4. In another bowl, crack the eggs and add the buttermilk, milk, and vanilla. Whisk until combined, then slowly add the melted butter.
  5. Combine the wet ingredients with the dry ingredients, whisking until just mixed.
  6. Cook the waffles according to the manufacturer's instructions until they are crisp and golden brown, usually indicated by a small amount of steam escaping from the waffle iron.
  7. Serve immediately or keep warm in a 200°F oven on a cooling rack.

Notes

For best results, use whole milk for a richer flavor.
