- 7 ounces hearts of romaine, chopped
- 1 (15-oz) can white beans, drained and rinsed
- ¾ cup freshly grated parmesan cheese
- ¼ cup olive oil
- 3 tbsp fresh lemon juice
- black pepper to taste
Instructions
- Drain and rinse the can of white beans in a colander, shaking off excess water and setting aside.
- In a measuring cup or small bowl, mix together olive oil and lemon juice until well combined.
- Chop the romaine hearts into thin shreds and place them in a large serving bowl.
- Add the rinsed white beans and parmesan cheese to the bowl with the romaine.
- Pour the dressing over the ingredients and toss everything together until well coated. Adjust seasoning with salt and pepper to taste.
- Serve the salad with your favorite main dish and enjoy. Store leftovers in an airtight container in the refrigerator for up to 3 hours.
Notes
Feel free to add more parmesan cheese for extra flavor.
