- ½ cup confectioners’ sugar
- 1 egg
- ½ teaspoon almond extract
- ½ teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ cup whole blanched almonds (sliced almonds)
- 2-3 tablespoons strawberry jam (or raspberry)
Instructions
- Preheat oven to 325°F and prepare a baking sheet.
- Cream butter and confectioners’ sugar until light and fluffy.
- Add egg, almond extract, and vanilla extract; mix until combined.
- Stir in flour and baking powder until just combined.
- Chill the dough in the refrigerator for 10 minutes.
- Shape into fingers and press an almond into one end as a nail.
- Chill cookies again for 15-20 minutes before baking.
- Bake for 20-25 minutes until pale golden.
- Cool slightly and add jam to the 'nail bed' of each cookie.
Notes
Use unsalted butter for better control of sweetness.
Chill the dough to maintain shape while baking.
