How to Make Ambrosia Fruit Salad

  1. Prepare the Fruit: Start by draining and patting dry the mandarin oranges, maraschino cherries, and pineapple tidbits to prevent the salad from getting too watery. Keep the pineapple juice for later!
  2. Make the Dressing: In a large mixing bowl, combine 1 cup of heavy cream, 1/4 cup of cream of coconut, 2 tablespoons of the reserved pineapple juice, 1/2 teaspoon of vanilla extract, and 1/8 teaspoon of salt. Beat with a handheld mixer until stiff peaks form, ensuring the cream holds its shape when you lift the whisk.
  3. Add Yogurt and Zest: Gently fold in 1/2 cup of full-fat vanilla Greek yogurt and 1/2 teaspoon of lemon zest into the whipped cream. Be careful to maintain the fluffiness of the dressing.
  4. Combine Ingredients: Add the halved grapes, maraschino cherries, pineapple tidbits, miniature marshmallows, and sweetened coconut flakes to the bowl. Gently fold to combine all ingredients without breaking the fruits.
  5. Finish with Oranges: Fold in the mandarin oranges last to keep them intact and showcase their beautiful color.
  6. Chill Before Serving: Cover your bowl with plastic wrap and refrigerate for at least 30-60 minutes. This period allows the flavors to meld perfectly and the creamy dressing to firm up slightly.

This ambrosia fruit salad peaks in freshness between 1–4 hours after chilling. Enjoy it that same day, especially if using fresh whipped cream for the lightest texture!

Storing & Reheating

Store any leftovers in an airtight container in the refrigerator where they’ll stay fresh for about three days. For longer storage, you can freeze the salad in a freezer-safe container for up to three months. Just remember that the texture might change slightly upon thawing. No need to reheat; serve chilled for the best experience!

Chef’s Helpful Tips

  • Avoid excess moisture by thoroughly draining all canned fruit, which keeps your salad from becoming soggy.
  • If the whipped cream begins to deflate, you may not have whipped it long enough. Keep beating until you achieve stiff peaks to maintain a fluffy texture.
  • For a lighter version, use light versions of heavy cream and Greek yogurt, but note that this may alter the richness.
  • Feel free to customize with seasonal fruits or berries for a twist each time you make ambrosia fruit salad.
  • Always serve on the same day for optimal freshness, especially if fresh whipped cream is used.

Each scoop of summer sweetness melds perfectly in this classic ambrosia fruit salad. You can easily adjust it to your taste by incorporating fresh fruits or a hint of vanilla for a unique touch. On hot days, this luscious salad makes for a delightful treat that brings everyone to the table with smiles.
