Description

This Ambrosia Fruit Salad boasts irresistible flavors with mandarin oranges, juicy pineapple, and creamy yogurt. Quick to prepare, it’s a perfect treat for any occasion!


Ingredients

  • 1 11-oz. can mandarin oranges, drained & patted very dry
  • 1/2 cup maraschino cherries, stems removed, quartered, rinsed, and patted very dry
  • 1 cup pineapple tidbits packed in juice (not syrup), drained (reserve juice) and patted very dry
  • 1 cup seedless green grapes, halved
  • 2 cups miniature marshmallows (white or rainbow)
  • 1 cup sweetened coconut flakes
  • 1 cup heavy cream
  • 1/4 cup cream of coconut not coconut cream- see notes (may sub ¼ cup powdered sugar)
  • 2 tablespoons pineapple juice (from above can of tidbits)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup full fat vanilla greek yogurt
  • 1/2 teaspoon lemon zest


Instructions

  1. Dry all canned fruits and pat them dry (reserve pineapple juice).
  2. In a large bowl, combine heavy cream, cream of coconut, pineapple juice, vanilla extract, and salt. Beat until stiff peaks form. Gently fold in Greek yogurt and lemon zest.
  3. Add the remaining salad ingredients (except mandarin oranges) to the dressing and fold to combine, then gently fold in the oranges.
  4. Cover and refrigerate for 30-60 minutes before serving.
  5. For the best taste, serve 1-4 hours after chilling to allow flavors to meld.

Notes

For a sweeter salad, increase the amount of cream of coconut used or substitute with powdered sugar.
Ensure fruits are properly dried to avoid excess moisture in the salad.
Serve immediately after chilling for optimal freshness and fluffiness.
