Description

These Red White and Blue Gumdrops offer a delightful burst of flavor with every chew. Made from cherry and berry jello blended into a simple mixture with applesauce and lemon, they’re a perfect treat for gatherings and special occasions. Ingredients

  • 5 cups sugar
  • 2 2/3 cups applesauce, divided
  • 2 packages (3 ounces each) cherry jello
  • 2 packages (3 ounces each) berry blue jello
  • 7 envelopes unflavored gelatin, divided
  • 9 envelopes unflavored gelatin
  • 1/2 cup water
  • 3/4 cups water
  • 1 1/2 cups sugar, divided
  • 1 teaspoon lemon extract
  • 2 cups sugar for coating


Instructions

  1. Grease two 9×13 baking dishes and one 8×8 baking dish.
  2. For the red and blue gumdrops, combine 2 cups sugar, 1 2/3 cups applesauce, 2 packages of cherry jello, and 2 packages of unflavored gelatin in a large saucepan.
  3. Allow the mixture to stand for 1 minute.
  4. Bring the mixture to a boil over medium heat, stirring constantly, and boil for 1 minute.
  5. Immediately pour the mixture into the greased 9×13 pan.
  6. Repeat the process with another 2 cups of sugar, 1 2/3 cups applesauce, the blue jello, and additional unflavored gelatin.
  7. For the white gumdrops, sprinkle 3 envelopes of gelatin into 1/2 cup of cold water in a small bowl.
  8. In a small saucepan, combine 3/4 cup of water and 1 1/2 cups sugar and bring to a boil while stirring constantly.
  9. Add the gelatin mixture, reduce heat, stir, and let simmer for 5 minutes.
  10. Remove from heat and stir in the lemon extract, then pour this mixture into the greased 8×8 pan.
  11. Place all the pans in the fridge for 3 hours.
  12. Cut the mixture into squares and carefully transfer them onto wax or parchment paper.
  13. Use a mini star cookie cutter to cut out shapes and place them on a tray lined with parchment or wax paper.
  14. Let the candies dry at room temperature for 8 hours or overnight.
  15. After a minimum of 8 hours, coat the gumdrops in the 2 cups of sugar until well coated.
  16. Serve!

Notes

Ensure the pans are well greased to ease the removal of the gumdrops.
Store fully coated gumdrops in an airtight container to keep them fresh.
