Description

Ingredients

  • 2 tablespoons olive oil if searing first
  • seasoning salt or salt and black pepper amount as desired
  • 2 1/2-3 pounds cubed chuck roast or stew meat 1 1/2-2 inch cubes
  • 32 ounces low-sodium beef broth
  • 10.5 ounce can condensed cream of mushroom soup regular or low-sodium
  • 0.87 ounce packet brown gravy mix regular or lower sodium
  • 1 ounce packet dry onion soup mix
  • 2 tbsp cornstarch


Instructions

  • Season the beef with seasoning salt or salt and black pepper as desired.
  • Optional: Heat olive oil in a skillet until hot. Sear the seasoned beef for 1-2 minutes, avoiding overcrowding the pan. Sear in batches if necessary.
  • In a crockpot, mix together beef broth, cream of mushroom soup, onion soup mix, and brown gravy mix until combined. Add the beef and any juices from the skillet.
  • Cover and cook on low for 7-9 hours or high for 4-6 hours.
  • In a small bowl, combine cornstarch with 2 tablespoons of water. Stir the mixture into the crockpot, cooking on high for an additional 10 minutes or until thickened.
  • Serve the beef tips over rice, pasta, mashed potatoes, or light bread.

Notes

For extra flavor, use fresh herbs like thyme or rosemary with the beef.
Serve with your favorite sides to complete this hearty meal.
Make it creamy by adding some sour cream or cream cheese before serving.
